Rick and Julie Bolin with children, Cole and Callie, moved up to South
Dakota in November of 2000. They immediately missed the authentic
Texan cuisine of Texas BBQ. After having BBQ shipped in a few
times, they felt it was more economical to cook it themselves.
Rick started with creating his red cooker and started cooking for the
family and friends. That then grew to smoking meat for family and
friends' events. They decided to name themselves R & J Texas BBQ.
In 2004, Rick decided to start a small business, during the summer
months, of serving sandwiches in a farm supply store's parking lot in
Milbank, SD. Soon after, he purchased a small camper used
for selling, known as the "cook shack." The cook shack grew in
popularity and was then established in a permanent location north of
Milbank. They were able to rent a kitchen to provide catering
services. By the summer of 2006, Rick wa s serving lunch and
dinners twice a week out of the cook shack and added a business partner,
Greg Thomas. By September 2006, they expanded into the inside
of
the "big brown Quonset" north of Milbank, where they currently reside.
They now offer an expanded menu and inside dining several days a week.
In 2007, Greg Thomas sold his portion of the business to Susan Karels.
With Susan's culinary knowledge, she has quickly become an asset to R &
J. She prepares all the baked goods, salads, and sides as well as
introducing new menu items.
